These Trader Joe’s pumpkin cookies are a yummy Fall seasonal favorite, with an easy to make cookie mix combining pumpkin, oatmeal and chocolate chunk flavors. There is a definite strong pumpkin type flavor, so you have to really feel like a seasonal cookie. I like the overall texture of these after they come out of the oven, but I think the best part is the smell that it fills the house up with as they start to bake. It makes me think of a cold fall night with the pumpkin, ginger, spice and chocolate chip cookies all blending into a heavenly smell…..…….

  1. Not super impressed. I cooked as is. Not good way too much ginger. 2nd batched added more chocolate chips and oatmeal. Ok but still not there. 3rd batch added peanut butter and cinnamon. At this point I think I created my own recipe. All of them were ok but the ginger still overpowered.
