These Trader Joe’s cauliflower thins have a nice cheesey doughy flavor to them with a texture somewhere in between flatbread and a tortilla. They definitely won’t make you think you are eating a regular tortilla or bread, but they do the job for a low carb option. The cauliflower craze is in full gear right now, with pizza crusts, pastas and riced cauliflower among other products. Generally I like cauliflower as a low carb way to mimic things like rice and bread. These Tjs cauliflower thins would probably be my go to low carb tortilla style option if it wasn’t for the Trader Joe’s jicama wraps that I recently discovered. The jicama somehow absorbs juices and flavor really well and I love the cool, crisp feel of it while also bending and folding like a real tortilla…….…….

Cauliflower Thins at Trader Joe’s
What does everyone like to use for recipes with these cauliflower thins? I’ve made some sandwiches with these that were really delicious and I tried making tacos but I didn’t love the way the cheese, sour cream and salsa kind of mixed with the doughyness of the cauliflower. I still love these as a good alternative way to mix things up, but sometimes I feel like they are caught in between a flatbread and a tortilla. And then I end up not using them for foods I thought I would since I cant decide if they will hold up well. I’d love to know everyone’s top 2 or 3 uses for these cauliflower thins, and how they would compare them with the jicama wraps in terms of low carb tortilla like options!
